Summer recipes – what to eat this weekend

The sun’s out, friends in the garden, drinks are flowing. But what are you eating? Sometimes the hot weather can make cooking a chore, but not anymore. 

Make summer cooking a breeze with these easy cuisine options…

We’ve put together our favorites for a weekend in the garden!

Every recipe comes with all the ingredients you’ll need to make your meal. Here’s a taster of what’s instore with EezyFood…


MAIN: Eezy Cheese & Bacon burger

  • A beer and a burger – the perfect pairing.
  • 100% British beef, crispy streaky bacon, sliced cheddar and our homemade burger sauce served in a toasted brioche.

YOU WILL NEED: 
Beef patty, potato, brioche bun mayo, mustard, tomato sauce, cheddar sliced, rocket and streaky bacon, olive oil, salt and pepper 

STEP BY STEP:

  1. Pre-heat oven to 210 degrees c. Cut potato into chips and place in boiling water – season and simmer for 6-7 mins on high. 
  2. Slice tomato for burgers. Combine your mustard, mayo and ketchup for sauce.
  3. Drain your potatoes and place in baking tray, drizzled in olive oil and pinch of salt. Roast for 20-25 mins. 
  4. Heat your pan on high; toast brioche buns for 2 mins until lightly crisp! Spread sauce onto either side of the bun.
  5. Add bacon to the pan and cook until nice and crispy! Set aside to rest.
  6. Add an extra drizzle of olive oil to your pan and cook the patties for 4-5 mins either side. Once cooked, lower the heat and add cheese.
  7. Build your burger and serve! Enjoy!

MAIN: Eezy Glazed Salmon

  • A sticky and sweet honey glaze, on a bed of spinach and fresh radishes, perfect for some summer sun
  • Ideal paired with a pinot grigio 

YOU WILL NEED: 

Salmon filets, spinach, radishes, honey, lemon, soy sauce, Dijon mustard, ginger, rice wine vinegar, tahini, olive oil, salt and pepper 

STEP BY STEP:

  1. Preheat oven to 230 degrees; peel and grate ginger
  2. Combine honey, ¾ of lemon juice, ½ soy sauce, Dijon mustard, and small amount of ginger. Add to salmon and set aside. 
  3. In separate bowl, add rest of the grated ginger, rice wine vinegar, soy sauce, lemon juice, olive oil and tahini. Whisk and set aside. 
  4. Oil a baking tray and bake salmon until cooked (6-8 minutes). After two minutes, baste with remaining marinade.  
  5. Thinly slice radishes, divide spinach over plates and top with radish.
  6. Place salmon on bed of spinach and drizzle with dressing. Enjoy!

SIDE: Eezy Chickpea & Feta Salad

  • Perfectly paired with a New Zealand Sauvignon Blanc
  • Crumbled feta and a sweet honey dressing – what’s not to love!

YOU WILL NEED:

Chickpeas, spinach, feta cheese, raisins, vinegar, honey, cumin, olive oil, salt and pepper

STEP BY STEP: 

  1. Combine olive oil, vinegar, honey, cumin and salt in bowl and whisk. 
  2. Drain chickpeas and add spinach and raisins. 
  3. Place spinach, chickpeas and raisins in bowl and top with crumbled feta. 
  4. Drizzle with dressing and enjoy!
